Cinnamon Rolls

Ingredients
2 and 3/4 cups all-purpose flour
3 Tablespoons sugar
1 teaspoon salt
1 package yeast
1/2 cup water
1/4 cup milk
2 and 1/2 Tablespoons unsalted butter
1 large egg

FILLING
3 Tablespoons unsalted butter, softened to room temperature
1 Tablespoon ground cinnamon
1/4 cup granulated sugar

GLAZE
1 cup confectioners’ sugar
1 teaspoon vanilla extract
2-3 Tablespoons milk

Directions-

Make the dough, mix 1/2 cup flour, sugar, salt and yeast. In the microwave, melt the water, melt and butter until butter is dissolved and mixture is hot. Mix it into the flour mixture, add the egg and combine. Dough will be elastic, put On floured surface and knead for a few minutes. Place in greased bowl and let rest for 10 minutes. After 10 minutes roll it out onto floured surface into a rectangle shape. Spread with melted butter and cinnamon and sugar mixture. Roll tightly and cut into 10 or 12 pieces. Place into greased cast iron skillet. Spread more cinnamon sugar On top. Place tin foil On top and let it rise for 1 hr. After 1 hr, bake for 20-25 min until golden brown. Make the glaze, mix powdered sugar, 1 tsp vanilla and milk. Spread On top of the rolls and serve hot. Enjoy with coffee..

Giant M & M Cookies

Giant M & M Cookies.  My handsome brought home M & M’s and asked if I could make cookies for him.  Of course I said yes, I don’t turn down a baking opportunity..

Ingredients-

1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 stick of butter
2 tsp vanilla
2 cups flour
1 tsp baking soda
2 tsp cornstarch
2 cups M & M’s (or more)

Directions-

Mix together the sugars, egg, butter and vanilla. Mix in the flour, baking soda and cornstarch. Fold in the M & M’s. Place dough in freezer for 30- 30 min. These will help the dough to stay puffy and chewy 🙂 Bake at 350 for about 10 min or until golden brown.. enjoy…

 

Gigantic White Chocolate and Milk Chocolate Sea Salt Cookies

Officially from now On I am only making large cookies, why you may ask because they are delicious and fantastic. They are moist and gooey.

Ingredients-
1 cup organic brown sugar
1 egg
2 tsp vanilla
1 stick butter
2 cups flour
1 tps cornstach
2 tsp baking soda
1/2 cup white chocolate chips or more
1/2 cup milk chocolate chips or more
sea salt

Directions-
Mix together brown sugar, egg, vanilla and butter until well combined. Add in the baking soda and cornstarch and flour. Mix in the chocolate chips. Store in refrigerator or freezer for up to 1 hr or longer. Use ice cream scooper to make large rounded cookie balls and place On silicon baking mat. Sprinkle with sea salt if desired. Bake at 350 degrees for about 10 min or until golden brown. Cool and Enjoy!!

Pizza

made pizza over the weekend and it turned out fantastic.. it was edible!

Ingredients-

Trader Joes Pizza Dough
Shredded Mozzerala
tomato sauce
spinach
garlic, pepper,salt,red pepper flakes
red bell peppers
oilves
olive oil
green onions

Let dough sit out for 20 min. Lightly flour and roll out into circle. Grease round large round pan. Stretch dough and place onto pizza pan.
Saute spinach with tomato sauce with garlic and seasoning in case iron skillet. Spread sauce onto dough, put cheese then olives and red bell peppers and green onions. Lightly oil the edges of crust. Bake at 350 degrees until golden brown. Cut and enjoy!!

Giant Chocolate Chip Cookie

This is one of my favorite things to bake. Easy to put together and you get a great end result. Plus it’s super yummy.

Recipe-
1/2 cup sugar
1/2 cup brown sugar
1 egg
2 tsp vanilla
1 stick of butter
1 1/2 cups flour
2 tsp baking soda
2 cups chocolate chips or your preference
sea salt
caramel chips (your preference)

Directions-
Mix together sugars, egg, vanilla and butter. Add in the bakings soda and flour. Mix in chocolate chips, caramel. Butter cast iron dish, place cookie dough in cast iron skillet. Grind sea salt On top of cookie. Bake at 350 for 20 min or until golden brown. Serve and enjoy, it would be great with ice cream as well.
